
Easiest 30-Minute Al Pastor Chicken Tacos (Gluten-Free)
These al pastor chicken tacos are so flavorful, healthy, and easy to make! This is another 30 minute meal that is absolutely mouthwatering, you will not be able to wait for lunchtime to get a bite of these!!
What Do You Need To Make These Al Pastor Chicken Tacos

- Corn tortilla: Corn flour is naturally gluten-free.
- Chicken: Chicken breast or chicken tenderloin are easiest to cut into diced pieces.
- Al pastor taco seasoning: Siete has an AMAZING al pastor seasoning packet.
- Pineapples: I HIGHLY recommend getting tidbit pineapples so you don’t have to spend time cutting them. If not, diced pineapples are fine, just cut them in half and then in half again.
- Garlic (minced)
- Red onions (diced)
- Cilantro (finely chopped)
- Cojita cheese (grated)
- Guacamole & habanero hot sauce (optional): Adds extra heat.
Lazy Person’s Guide To The Perfect Al Pastor
- Please note, al pastor is traditionally made with seasoned and marinated pork. However, with being a busy 9-5’er, I save time by using the Siete al pastor seasoning packed on whatever protein I want! I also use chicken as it’s healthier and can still lock in the yummy flavors efficiently!

How To Make
Cut up your chicken breasts into 1/2 inch pieces.
Combine ½ Siete seasoning packet, water, and chicken into a mixing bowl. Stir around then add the rest of the seasoning packet. Let marinate for 5-10 minutes.
While it marinates, combine dices red onions and diced pineapple slices into a bowl and set in the refrigerator.

Add olive oil into a pan over medium heat. Add in the marinated chicken and let simmer for 8-10 minutes, stirring constantly.
To plate, warm a corn tortilla, add al pastor chicken, red onion/pineapple mix, cilantro, cojita cheese, and enjoy.
