Ingredients
- 1 lb Chicken breast
- 1 teaspoon onion powder
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garlic powder
- ¼ tsp cayenne pepper
- 1 tbsp chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon fine sea salt plus more to taste
- ½ teaspoon coarse ground black pepper
- ½ teaspoon crushed red pepper flakes
- 2 cups Rice (Basmati) long grain white rice
- 3 cups Water
- 1 Lime juice
- 2 tbsp Butter
- 1 tbsp Oil
- Cilantro
- 3 15.25-ounce cans corn, drained
- 2 tbsp Butter
- kosher salt
- 3 tablespoons mayonnaise
- 1-2 tablespoons lime juice
- 2 teaspoons chili powder divided
- cotija cheese
- cilantro chopped
Instructions
- First cook your rice. In a rice cooker, combine your rice, lime juice, water, butter, and oil. Let it cook until done. Once done, unplug the rice cooker and stir in the fresh cilantro.
- While the rice cooks slice your chicken breast into ½ inch slices.
- In a mixing bowl combine the chicken with our seasoning blend. Season generously and cover all the chicken.
- In a medium pan heat oil on medium heat. Add the chicken and sear on each side until cooked through. Approximately 5 minutes per side.
- In a medium pot add in your corn and steam for 5 minutes.
Elote Options
- Option 1: Add in the mayo lime juice, chili powder, cotija cheese in with the corn.
- Option 2: Mix the mayo lime juice chili powder together and drizzle over your bowl. Then sprinkle with cotija cheese.
