That’s why I’m obsessed with breakfast meal prep recipes that are quick, filling, and actually taste amazing. Which brings me to my go-to savory breakfast idea that makes mornings feel a little more put together, even if I’m grabbing a fork while answering emails.
This easy breakfast fried rice is packed with fluffy scrambled eggs, sautéed veggies, and day-old rice fried to crispy perfection. It’s everything I love about classic fried rice, but with a breakfast twist. Plus, it reheats like a dream, which means you can make a big batch on Sunday and enjoy a satisfying, protein-packed breakfast all week long.
Why You’ll Love Breakfast Fried Rice?

Ingredients
- 2 cups cold cooked rice (jasmine or brown rice works great)
- 2 eggs scrambled
- ½ cup diced bell pepper
- ½ cup chopped spinach or kale
- 2 green onions chopped
- 1 tbsp low-sodium soy sauce or tamari
- 1 tsp sesame oil
- 1 tbsp olive oil or avocado oil
- Salt and pepper to taste
- Optional: cooked bacon turkey sausage, or tofu for extra protein
Instructions
- Prep your ingredients ahead of time! Chop veggies, scramble eggs, and get your rice cold and ready.
- In a large skillet or wok, heat olive oil over medium heat. Add veggies and sauté for 3-4 minutes until slightly softened.
- Push veggies to the side and scramble the eggs directly in the pan.
- Add in the cold rice and break it up with a spatula. Stir everything together.
- Drizzle in soy sauce and sesame oil. Stir-fry for 2-3 minutes until everything is heated through and lightly crispy.
- Top with green onions and serve immediately, or portion into containers for the week!
