Start your day with this easy and flavorful breakfast fried rice recipe, packed with savory eggs, veggies, and crispy rice!

Ingredients

  • 2 cups cold cooked rice (jasmine or brown rice works great)
  • 2 eggs scrambled
  • ½ cup diced bell pepper
  • ½ cup chopped spinach or kale
  • 2 green onions chopped
  • 1 tbsp low-sodium soy sauce or tamari
  • 1 tsp sesame oil
  • 1 tbsp olive oil or avocado oil
  • Salt and pepper to taste
  • Optional: cooked bacon turkey sausage, or tofu for extra protein

Instructions

  • Prep your ingredients ahead of time! Chop veggies, scramble eggs, and get your rice cold and ready.
  • In a large skillet or wok, heat olive oil over medium heat. Add veggies and sauté for 3-4 minutes until slightly softened.
  • Push veggies to the side and scramble the eggs directly in the pan.
  • Add in the cold rice and break it up with a spatula. Stir everything together.
  • Drizzle in soy sauce and sesame oil. Stir-fry for 2-3 minutes until everything is heated through and lightly crispy.
  • Top with green onions and serve immediately, or portion into containers for the week!
