
30-Minute One Pot Easy Sweet Potato Breakfast Hash
A yummy breakfast side dish my mom used to make for us growing up, is warm and savory chopped sweet potatoes. To elevate this childhood favorite, we are going to make a super easy sweet potato breakfast hash!
This is a healthy breakfast option that packs in potassium, vitamin C, and fiber!

- Bell pepper
- Red onions

How To Make This Easy Sweet Potato Breakfast Hash
Chop up any veggies you’re using.
In a skillet, raise the heat to medium heat. Pour in 1 tbs of olive oil, then put the chopped bell peppers and chopped red onions in the skillet. Stir and cook for 2 minutes.

Add in the chopped sweet potatoes, sprinkle on the seasonings, and let it cook for 10 minutes, covered, and occasionally stir.

Add in your chopped kale and green onions. Cover and let the kale cook for two to 2-3 minutes. Then stir for an additional 2 minutes.

- 1/2 Bell pepper (any color)
- 1/2 cup Red onion
- 2 tbsp Green onion
- 1 cup Baby kale (chopped)
- 2 Egg optional
- 1/2 tsp Turmeric
- 1/2 tsp Onion powder
- 1/2 tsp Garlic powder
- 1/4 tsp Salt
- 1/2 tsp Pepper
Instructions
- Chop up any veggies you’re using.

- Optional: Make 2-3 wells to pour the eggs into. Pour the eggs into the wells and let cook, covered for a 3-5 minutes.
