
Fall Harvest Soup
Ok friend, let’s talk about soup! Because who has time for elaborate culinary masterpieces when you’re adulting hard all week?! Not me, and probably not you either, no shade.🙂↔️
This recipe is all about getting those cozy, fall vibes without spending your entire Saturday in the kitchen! My love language is definitely “minimum effort, maximum deliciousness” when it comes to cooking after 6 PM.
That’s where this Fall Harvest Soup comes in. It’s like a warm hug in a bowl, packed with all those fall flavors we crave, but it’s SO easy. We’re talking minimal prep, one pot, and enough leftovers to get you through a couple of lunches (because meal prep, even accidental meal prep, is a win!).

Ingredients
- 4 cups Vegetable broth
- 1 cup Water
- 2 tbsp Lemon juice
- 2 tbsp olive oil
- 1 Potato diced
- 2 cups Kale chopped
- 2 can Tomatoes crushed
- 1 can Kidney beans
- 1 can Corn drained
- 2 Celery stalks chopped
- 2 medium Carrots peeled and chopped
- 1 Bay leaf
- 1 tsp Italian seasoning
- 1/4 teaspoon dried sage
- Salt and black pepper to taste
Instructions
- Sauté The Veggies: Grab a big pot or Dutch oven and heat the olive oil over medium heat. Toss in the chopped onion, carrots, and celery. Cook 'em down for about 5-7 minutes, until they start to soften up. Then add the garlic and simmer for another 2 minutes.
- Liquid Gold: Pour in the vegetable broth, water, diced tomatoes (undrained!), kidney beans, and sage. Give it all a good stir to combine. Then place the bay leaf on top.
- Bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for 20-30 minutes, or until the sweet potato and squash are tender when poked with a fork.
- Season & Serve: Once the veggies are tender, give the soup a taste test and season with salt and pepper as needed. Then remove the bay leaf. Sometimes I add a tiny pinch of sugar if my tomatoes are a bit tart, but totally optional! Ladle it into bowls and top with whatever makes your heart happy.
