Greek chicken bowls are my go-to so you'll be impressed by this most delicious mediterranean chicken meal prep.

Equipment

  • 1 Medium pan
  • 1 Medium mixing bowl

Ingredients

Grilled Chicken
  • 2 lbs boneless skinless chicken breasts (approx. 4–5 medium breasts)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 garlic cloves minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ¾ tsp sea salt
  • ½ tsp black pepper
Cucumber-Tomato Mix
  • 2 cups cherry tomatoes halved
  • 1 large cucumber diced
  • ¼ cup red onion finely chopped
  • 2 tbsp fresh parsley chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
Optional Additional Side Dishes
  • 2 ½ cups cooked quinoa or brown rice ½ cup per bowl (optional)
  • 1 ¼ cups hummus ¼ cup per bowl
  • Lemon wedges
  • Parsley for garnish

Instructions

  • In a bowl, whisk together the lemon juice, olive oil, garlic, oregano, paprika, salt, and pepper. This is our marinade.
  • Add in the chicken and let the marinade cover the chicken completely. If you want, you can throw it all into a large plastic bag as well. Let sit and marinate for 30 minutes in the fridge.
  • While the chicken is marinating, lets make the cucumber tomato mix. Combine the chopped tomatoes, cucumber, red onions, and parsley in a medium bowl. Drizzle with the olive oil and lemon juice. Then season with salt and pepper.
  • Heat your grill or a medium pan to medium-high heat and grill the chicken for 5-6 minutes per side, until it is fully cooked.
  • In each meal prep container add in the grilled chicken, cucumber tomato mixture, hummus, and rice (optional)
  • Seal and store containers for up to 4 days.
