Fluffy and Flavorful Garlic & Lemon Mediterranean Rice in Rice Cooker

If you love greek food as much as I do, you know that an amazing greek dish often times comes with fluffy, lemon and herb-y rice! 

As a 9 to 5’er, I’m constantly finding ways to save time and money with my cooking. So what better way to do that than to make garlic and lemon greek rice in rice cooker!

I thought of cooking this up after I made my delicious chicken and feta meatball recipe. Which you should definitely check out!


What do you need to make Mediterranean Rice in Rice Cooker?

Rice Cooker Lemon Garlic Rice ingredients

The best rice that is commonly used in Greek food is long grain rice. I have been using Basmati rice and with my recipe it come out so fluffy and delicious.

Lemon is such a huge part of greek food as well. We will use half of a lemon and juice it into our rice cooker.

Another way to add yummy flavor to our dish is to add chicken stock instead of water. We will also use butter and olive oil.

Lastly, we need our seasonings! Oregano and thyme are super common in Greek dishes. Lastly, we will put a dash of salt and pepper.

Why Chicken Broth Instead Of Water?

The simple answer is – it adds SO much flavor! I typically use store bought chicken broth.

You can also use chicken bouillon cubes if you don’t have chicken broth. Just add 2 cups of water and 1-2 chicken bouillon cubes. 

How To Make The Best Greek Rice In Rice Cooker

These steps are WAY too simple to not add this to your meal prep rotation.

Pour your chicken broth, oil, butter, garlic, and rice into the rice cooker.

Squeeze the lemon half into the rice cooker.

Cook until it turns from “cook” to “warm”.

When the rice cooker switches from “cook” to “warm”, add your seasonings immediately and stir in those heavenly flavors.

Unplug the rice cooker. You do not want it to stay warm and dry out the rice.

I don’t like to add my seasonings before I cook the rice, because it can settle on the side or cluster up in only a few places. And we want ALL the rice to get the love!

So adding seasonings after cooking, when it’s still warm allows all the rice to get some seasoning.

Are you tired of boring sides? This mediterranean rice in rice cooker recipe effortlessly elevates any weeknight entree with its bright, zesty flavor and perfectly tender rice, proving that delicious doesn’t have to mean hours in the kitchen for us busy people.

Ingredients

  • 1 cup Rice
  • 2 tbsp Butter
  • 2 cups Chicken stock
  • ½ Lemon I squeeze half a lemon into the rice.
  • ½ tbsp Olive oil
  • 1-2 cloves Garlic
Seasonings After Cooking
  • 2 tsp Oregano
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Thyme

Instructions

  • Pour your chicken broth, oil, butter, garlic, and rice into the rice cooker.
  • Squeeze the lemon half into the rice cooker. Get as much juice as you can.
  • Cook until it turns from “cook” to “warm”. It should take about 20 minutes.
  • When the rice cooker switches from “cook” to “warm”, add your seasonings and stir them in.
  • Unplug the rice cooker. You do not want it to stay too warm and dry out the rice.
