Healthy Cajun One Pot Shrimp And Sausage Rice

This Cajun-inspired shrimp and sausage rice recipe is perfect for a weeknight dinner! This recipe is super healthy and has traditional Cajun staples bursting with flavor and protein.

What Ingredients Do You Need?

  • Chicken andouille sausage, sliced
  • Olive oil spray
  • Bell pepper, diced
  • Yellow onion, diced
  • Celery stalk, chopped
  • Cherry tomatoes, sliced
  • Cajun seasoning
  • White rice, raw, uncooked
  • Chicken broth
  • Shrimp, raw & deveined
  • Fresh parsley, chopped for garnish

Authentic Cajun Flavors!

  • Andouille chicken sausage, a smoked sausage that’s a staple in Cajun cooking. It brings a distinct flavor and texture that doesn’t need seasoning.
  • Add celery to the bell peppers and onion. This trio is the base for many Cajun dishes.
  • Cajun Seasoning: Used a blend of spices typical of Cajun cuisine, including paprika, cayenne, garlic powder, onion powder, oregano, and thyme. You can always adjust the cayenne to control the heat.

How To Make Shrimp And Sausage Rice

Cajun Seasoning: If making your own Cajun seasoning, combine all the spices in a small bowl and set aside.

Over medium heat, Add ½ tbsp of olive oil and cook the andouille sausage until it’s browned. Then remove and set aside.

Add ½ tbsp of olive oil and add in thawed shrimp. Add ½ tbsp of cajun seasoning and cook for 2 minutes, until shrimp is slightly cooked. (Optional: Add in ½ tbsp of white wine to add a huge burst of flavor. Cook for an additional minute) Then remove and set aside with the sausage.

Add  ½ tbsp of olive oil and add the bell peppers, onion, and celery to the pot. Cook until softened, about 5-7 minutes.

Stir in the 1 tbsp of Cajun seasoning and cook for about 1 minute, stirring constantly, until fragrant.

Add the rice to the pot and stir to coat with the spices and vegetables. Pour in the chicken broth and add the halved cherry tomatoes. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked.

Gently stir in the shrimp and cooked sausage. Cover and cook for another 5-7 minutes, or until the shrimp are pink and cooked through.

Remove from heat and let stand for 5 minutes before fluffing with a fork. Stir in the scallions. Garnish with fresh parsley. Serve hot.

  • 3 cups reduced sodium chicken broth
  • 1 lb shrimp raw, deveined
  • 2 scallions chopped
  • Fresh parsley chopped (for garnish)

  • 1 tbsp Kosher salt
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tbsp Oregano
  • 1 tbsp Thyme
  • 1 tsp Black pepper
  • 1 tsp Cayenne pepper
