30-Minute Garlic & Lemon Shrimp Scampi Orzo

I am a seafood lover and one of my favorite types of seafood is shrimp! So this 30 minute shrimp scampi orzo is made with extra love!

 I remember growing up I always wanted to go to Red Lobster for my birthday and get the ultimate feast. I would substitute the breaded shrimp for more garlic shrimp – so ya girl knows how to throw down some scrumptious and flavorful garlic shrimp.

If you can appreciate some amazing shrimp like me, you will LOVE this protein packed shrimp orzo meal that can be made in 30 minutes!

Shrimp Scampi: A Light Italian Dish Perfect For Lunchtime

My Shrimp Scampi is a delicious Italian dish that you will want to make all the time!

  • It takes 30 minutes to prepare and make.
  • We are adding NO salt! The other ingredients sodium content soaked up by the Shrimp
  • We top it with the super green, spinach, which adds a pop of color, and healthiness to the dish.

How To Make Shrimp Scampi Orzo

  • Put your butter in the pan and raise the heat to low to medium heat.
  • Sear two garlic cloves in the pan for 2 minutes. When the garlic starts to brown, immediately move to the next step
  • Add in the shrimp, sprinkle in the black pepper, fold it all in with the garlic-butter paste, squeeze the lemon juice in, and let it simmer for 2-3 minutes on now medium to high heat until its slightly browned, the garlic is sticking to the shrimp, and most of the juice has evaporated.
  • Add in the cooking white wine and stir constantly until the white cooking wine has evaporated (3-5 minutes). You can lower the heat to medium.
  • Remove the shrimp and place them in a bowl and set aside.
  • Add in vegetable broth in the pan and bring it to a boil on high heat.
  • Add in orzo and reduce heat to a low-medium heat and let simmer for 10-12 minutes.
  • Once fluffy and chicken broth is evaporated, add in spinach and fold into the orzo for a minute so it wilts.
Shrimp Scampi Orzo

Stir in the shrimp and sprinkle in the red pepper flakes and parsley. Enjoy .

  • 12-16 Oz.* Shrimp peeled and deveined
  • 2 tbsp Butter
  • ¼ cup White wine for cooking
  • 2 Garlic cloves
  • 1 tsp Pepper
  • ½ Juice from a lemon

  • 1 ½ cups Orzo (or Gluten-free orzo)
  • 3 cups Chicken broth

Notes

16 oz. = 1 lb
I used a 12 oz bag but you can use up to a full lb of shrimp.
