Ingredients

  • 1 tbsp Olive oil
  • 1 lb Baby potatoes
  • 2 tsp Garlic powder
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions

  • Place the baby potatoes in a pot and cover them with cold, salted water. Bring to a boil and cook until they are fork-tender, about 15-20 minutes. Drain the potatoes well.
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.
  • Place the cooked and drained potatoes on the prepared baking sheet. Using the bottom of a glass, a potato masher, or a sturdy spatula, gently press down on each potato to smash it slightly. You want them flattened but still mostly intact.
  • Drizzle the smashed potatoes with olive oil. Sprinkle generously with salt, black pepper, and garlic powder.
  • Sprinkle the dairy-free parmesan cheese evenly over the smashed potatoes.
  • Bake for 15-20 minutes, or until the potatoes are golden brown and crispy around the edges.
  • Carefully remove the baking sheet from the oven. Sprinkle with additional dairy-free parmesan cheese, if desired. Serve hot as a delicious side dish.
