Ingredients

Taco Chicken
  • 1 lb Chicken breast
2 ½ tbsp of Homemade Seasoning for Chicken (make separately and only use 2 ½ tbsp, set the rest aside)
  • 1 teaspoon onion powder
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • ¼ tsp cayenne pepper
  • 1 tbsp chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon fine sea salt plus more to taste
  • ½ teaspoon coarse ground black pepper
  • ½ teaspoon crushed red pepper flakes
Rice cooker rice
  • 2 cups Rice (Basmati) long grain white rice
  • 3 cups Water
  • 1 Lime juice
  • 2 tbsp Butter
  • 1 tbsp Oil
  • Cilantro
Steamed Corn
  • 3 15.25-ounce cans corn, drained
  • 2 tbsp Butter
  • kosher salt
Street Corn
  • 3 tablespoons mayonnaise
  • 1-2 tablespoons lime juice
  • 2 teaspoons chili powder divided
  • cotija cheese
  • cilantro chopped

Instructions

  • First cook your rice. In a rice cooker, combine your rice, lime juice, water, butter, and oil. Let it cook until done. Once done, unplug the rice cooker and stir in the fresh cilantro.
  • While the rice cooks slice your chicken breast into ½ inch slices.
  • In a mixing bowl combine the chicken with our seasoning blend. Season generously and cover all the chicken.
  • In a medium pan heat oil on medium heat. Add the chicken and sear on each side until cooked through. Approximately 5 minutes per side.
  • In a medium pot add in your corn and steam for 5 minutes.

Elote Options

  • Option 1: Add in the mayo lime juice, chili powder, cotija cheese in with the corn.
  • Option 2: Mix the mayo lime juice chili powder together and drizzle over your bowl. Then sprinkle with cotija cheese.
