How To Make Sweet Potato Turkey Bowls

  • Combine 1 cup rinsed white rice, 2 cups water or broth, butter, and a pinch of salt in a rice cooker and let it begin cooking.
  • While the rice is cooking, peel and dice the sweet potato.
  • Then, heat ½ tablespoon olive oil in a large Dutch oven or deep skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Add the seasonings (½ tsp cumin, ½ tsp oregano, ½ tsp paprika, ½ tsp salt, ¼ tsp pepper) and constantly mix in the seasonings & cook for 5 minutes.
  • Add in the garlic and mix in for 2-3 minutes.
  • Once the ground turkey is fully cooked, set the ground turkey aside in a bowl.
  • Add in the sweet potatoes into the same pot with ½ tbsp of oil and cook while stirring occasionally for 5-7 minutes until the sweet potatoes are soft and the exterior is slightly browned.
  • Add in the rest of the seasonings.
  • Add in spinach and turn down the heat to a low to medium heat and let the steam cook the spinach for 2-3 minutes.

  • 2 cloves Garlic minced
  • 1 Large sweet potatoes peeled and diced into 1/2-inch cubes (or 2 medium sweet potatoes)
  • 5-6 cups Baby spinach
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper or to taste
For the Rice (cook in rice cooker):
