30 Minute Prep Shredded Chicken Greek Tzatziki Bowl (Gluten Free)

One of my absolute favorite types of food is Greek food so it makes sense I have a simple meal prep Tzatziki Bowl! This greek chicken bowl is packed with protein, veggies, and dairy-free feta goodeness!

Often times, you see tzatziki bowl recipes with chopped chicken, but I’ve found that shredded chicken is a lot less prep time and can soak up the seasoning flavors much easier.

This flavor packed greek chicken bowl will be so tasty, you’ll forget that Greek food is one of the healthiest types of food you can eat!


What Ingredients To Make This Tzatziki Bowl?

For the chicken:
  • Shredded chicken – Acts as the juicy, tender base that soaks up all the herbs for flavor in every bite.
  • Garlic, Oregano, Thyme, Basil – Brings a warm, earthy essence that perfectly complements the lemon and chicken.
  • Minced onion – Gives a gentle sweetness and savory background flavor that rounds out the dish.
  • Minced garlic – Boosts the garlic flavor even more, adding richness and aroma that meld beautifully with the herbs.
  • Salt and pepper – Essential for elevating and balancing all the other flavors, making everything pop just right.
For The Rice (We are using my fluffy and flavorful greek rice recipe):
  • 1 cup Rice
  • 2 tbsp Vegan Butter
  • 2 cups Chicken stock
  • ½ Lemon I squeeze half a lemon into the rice.
  • ½ tbsp Olive oil
  • Seasonings to top after cooking: Oregano, Thyme, Salt, and Pepper
Toppings
  • Kale
  • Feta cheese (dairy free)
  • Tzatziki dip
  • Cucumber, tomato, & olive mix
  • Red onions

At first glance, this Greek chicken bowl might look like it has a long ingredient list—but don’t let that fool you. Once you get cooking, everything comes together in about 30 minutes of prep, making it an easy, flavor-packed meal that’s perfect for busy weeks.

How I Packed This

I packed this pretty efficiently if I do say so myself.

I put the hot things that I will microwave in the microwaveable container: chicken, rice, and kale.

The cold things to go on top of my Greek chicken bowl were put in a little plastic baggy so my: tomato and cucumber mix, feta cheese, and olives. I put them on after microwaving.

I also packed some tzatziki dip to throw on top of it all. Dreamy Greek paradise in every freaking bite! 🤤

Ingredients

Greek Rice
  • 1 cup rice
  • 2 cups of chicken stock
  • ½ tbsp Garlic
  • ½ Lemon juice
  • ½ tbsp Oregano
  • Salt
  • 1 tsp Pepper
  • ½ tbsp olive oil
Shredded Chicken
  • 2 cups Cooked shredded chicken
  • 2 cloves Garlic minced (or 2 tsp minced garlic)
  • 1 tsp Minced red onion
  • 1 tsp Dried oregano
  • ½ tsp Dried thyme
  • ½ tsp Dried basil
  • Juice of ½ a lemon
  • Salt and pepper to taste
  • 2 tbsp Olive oil optional for flavor and moisture
Toppings
  • Tomato, Cucumber, Olive Mix
  • Feta cheese crumbles
  • Lemon slices

Instructions

Lemon garlic rice (5 minutes)

  • Add in the chicken broth, garlic, and squeeze half a lemon into the rice cooker.
  • Add in the rice.
  • Let cook until done.
  • Unplug the rice cooker once complete to avoid over heating.
  • Sprinkle seasonings on the rice evenly.

Shredded chicken (10 minutes)

  • Add 2 tablespoons of olive oil to the pan.
  • Add in the garlic and red onions and let simmer for a minute on low to medium temperature.
  • Add 2 tablespoons of water to the pan.
  • Add in the shredded chicken and seasonings.
  • Let cook and stir occasionally for 5 minutes.

Finally, add toppings. (5 minutes)
